BANANA CHOCOLATE CHIP MUFFINS 
2 c. flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 stick butter, softened
1/2 c. packed brown sugar
2 lg. eggs
2 lg. ripe bananas, mashed
1/3 c. milk
1 tsp. vanilla
3/4 c. chopped pecans
3/4 c. semi-sweet or milk chocolate chips

In a large bowl, combine the butter and brown sugar. Beat until light and fluffy. Beat in eggs. Stir in the bananas, milk and vanilla. (The mixture will look curdled.)

Combine the flour, baking powder, soda, and salt. Stir the dry ingredients into the batter until just moistened. Stir in the nuts and chocolate chips.

Spoon the batter into prepared muffin cups. Bake at 375 degrees for 30 minutes. Remove from tins and cool on a wire rack. Store in an airtight container. Makes 12 muffins.
