BANANA CHOCOLATE CHIP MUFFINS
3/4 c. whole wheat flour
3/4 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 c. semi-sweet chocolate chips
2 eggs
2/3 c. firmly packed brown sugar
1/4 c. corn oil
1 1/2 c. mashed ripe bananas (about 4 med.)

I use all-purpose flour for all of it.

Preheat oven to 375 degrees. Spray muffin pan with a non-stick spray; set aside.

In a medium bowl, combine flours, baking powder, baking soda and chocolate chips; mix well.

In a large bowl, beat eggs lightly. Stir in brown sugar, oil and bananas. Blend well. Add flour mixture and gently fold together until dry ingredients are moistened.

Fill muffin cups 3/4 full. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Serve warm.
