GRILLED BROWN SUGAR PORK CHOPS
1/4 c. light brown sugar (packed)
1/4 c. apple juice
2 tbsp. vegetable oil
1 tbsp. soy sauce
1/2 tsp. ground ginger
Salt and pepper to taste
1 tsp. corn starch
6 boneless loin pork chops, 1/2 inch thick

Start fire in grill, placing rack about 6 inches above coals. Prepare sauce: When coals are almost ready (medium hot) in 2 quart saucepan combine brown sugar, apple juice, oil, soy sauce, ginger, salt and pepper. Bring to a boil over medium heat, stirring until sugar dissolves.

In small bowl combine 1/4 cup water into corn starch to dissolve. Add to mixture in saucepan. Return to boil, stirring, when mixture is slightly thickened, remove from heat.

Prepare pork: Grill chops over hot coals about 10 to 12 minutes turning once. Brush with sauce, grill 5 minutes longer until pork is well glazed and cooked through, turning once more and brushing with sauce.
