CHINESE CHICKEN 
1 c. cooked rice
2 c. cooked chicken, diced
1 can cream of chicken soup
3/4 c. mayonnaise
1 sm. onion, diced
1 c. diced celery
1 can water chestnuts (sliced and drained)
1 stack Ritz crackers
1/2 stick butter

Saute onion and celery. Mix with all other ingredients. Put in casserole dish. Crush Ritz crackers and mix with melted butter. Sprinkle over top of casserole. Bake at 350 degrees for 30 minutes.
