POTATOES ROMANOFF 
5 c. diced cooked potatoes
2 tsp. salt
2 c. cottage cheese
1 c. sour cream
1/4 c. minced green onion
1/2 c. sharp Cheddar cheese, grated
Garlic powder
Paprika

Cook potatoes unpeeled, cool. Peel and dice. Sprinkle with 1 teaspoon salt. Combine cottage cheese, onion, sour cream, garlic and 1 teaspoon salt. Fold in potatoes and pour into buttered casserole dish. Top with cheese and paprika. Bake at 350 degrees for 40 to 45 minutes.
