GREEN STUFFED BAKED POTATOES 
6 med. potatoes
3 stalks broccoli
1/4 c. milk
3/4 c. grated cheese
2 tbsp. butter
1 tsp. salt
1/8 tsp. pepper

Butter skins and make shallow slits around the middle lengthwise. Bake until done. Steam whole stalks until just tender and chop fine. (The food processor works well for this). Slice potatoes in half and scoop insides into a bowl. I throw it in the processor with the broccoli. Add 1/2 cup of cheese, the butter, salt, pepper and milk to the potatoes and broccoli. Blend well until mixture is pale green. Heap into potato skins and sprinkle with remaining cheese. Return to oven and heat through. These freeze well and can be reheated in the microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
