STUFFED BAKED POTATOES 
4 baking potatoes
1 bunch green onions
1 (8 oz.) can mushroom pieces
4 oz. sour cream
8 oz. Cheddar cheese

Wash and bake potatoes at 375 degrees. While potatoes are baking, chop onion and grate cheese. When potatoes are completely baked, remove from oven and carefully slice the tops off in an oblong fashion. Allow to cool slightly and then, using a spoon, carefully scoop out cooked potato and whip together with sour cream. (You can reserve the potato tops for potato skins, if desired.) When a smooth texture is obtained, stir in remaining ingredients, leaving out a small amount of green onion for garnish. Once all ingredients are combined, spoon mixture back into potato shell, garnish with green onion, and bake 20 minutes or until cheese melts.
