GINGER MOLASSES COOKIES 
1/3 c. shortening
1/3 c. brown sugar
1 egg
2/3 c. molasses
2 3/4 c. flour
1 tsp. baking soda
1 tsp. ginger
2 tsp. cinnamon

Mix together first 4 ingredients thoroughly. Sift together remaining ingredients and stir in. Mix dough well and chill 1 hour.

Roll out 1/4 inch thick. Cut into desired shapes. Place 1 inch apart on lightly greased baking sheet. Bake at 375 degrees until when lightly touched with finger not imprint is left (8-10 minutes). When cool, ice and decorate. Yields approximately 5 dozen. Excellent Christmas cookies.
