REFRIGERATOR ROLL DOUGH | |
1 cake compressed yeast or 1 pkg. active dry yeast 2 tbsp. lukewarm water 1 c. milk, scalded 1/4 c. sugar 1 1/2 tsp. salt 2 eggs or 4 egg yolks 4 c. sifted all-purpose flour 1/2 c. melted butter Soften yeast in lukewarm water. Combine scalded milk, sugar and salt; cool to lukewarm. Add softened yeast, well-beaten eggs or egg yolks and mix. Add about 1/2 the flour and mix; add butter and beat well. Add the remaining flour gradually, mix, but do not knead. Place in a lightly greased bowl, grease surface of dough lightly, cover and chill until firm enough to be handled easily. Makes 2 coffee cakes or 2 dozen rolls. |
