SCOTCH RAISIN BREAD | |
3 c. flour 2 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 2 eggs 1 c. sugar 2 c. buttermilk 2/3 c. molasses 1 1/2 c. quick or old fashioned oats 1 1/2 c. raisins 1/2 c. chopped nuts Heat oven to 350 degrees. Grease and flour two 8 1/2 x 4 1/2 x 2 1/2 loaf pan; set aside. In a medium bowl, sift together flour, baking soda, baking powder and salt; set aside. In a large mixer bowl, beat eggs until light. Add sugar gradually, beating until fluffy. Add buttermilk and molasses; mix well. Blend dry ingredients into sugar mixture. Add oats, raisins, and nuts; stir just to combine. Pour into prepared pans and bake for 1 hour or until tests done. Remove from pans and cool on wire racks. Store 1 day before slicing. |
