ZUCCHINI QUICK BREAD 
3 c. flour
1 1/4 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. cinnamon
1 c. vegetable oil
2 c. sugar
3 eggs
2 c. shredded zucchini
1/2 tsp. grated lemon peel (rind)
2 tsp. vanilla
1/2 c. chopped nuts or raisins

Sift together flour, salt, baking soda, baking powder and cinnamon. Set aside in a mixing bowl, blend oil, sugar and eggs together. Drain shredded zucchini and add along with vanilla to mixing bowl. Blend well. Stir in sifted dry ingredients, nuts or raisins. Stir only to combine.

Pour into 2 greased and floured 9x5x3 inch loaf pans. Bake in a preheated 325 degree oven for 60 minutes. Cool 10 minutes, then remove loaves from pan and allow to cool thoroughly. Wrap well and store. Makes 2 loaves.
