PIZZA SAUCE FROM SCRATCH 
1/4 c. olive oil
1 med. finely chopped onion
4 chopped clove garlic
1 (28 oz.) can plum tomatoes
1 (6 oz.) can tomato sauce
1 (6 oz.) can tomato paste
2 tbsp. crushed basil
2 tbsp. crushed oregano
1 tbsp. parsley flakes
1 tsp. salt
1/2 tsp. black pepper
1/8 tsp. red pepper
2 tsp. rosemary
1 1/2 tsp. lemon juice
3 tbsp. honey
Ample 1/4 c. of any dry red wine
3 tsp. corn syrup
3/4 tsp. molasses
3/4 tsp. vinegar

Heat oil in non-stick fry pan. Add chopped onion and saute for 4 minutes. Then add chopped garlic and saute for 3-5 minutes. Add tomatoes, chopping them up slightly, tomato sauce, tomato paste, basil, oregano, parsley, salt, black and red peppers, rosemary. Stir in lemon juice, honey, wine, corn syrup, molasses, and vinegar. Simmer gently for 45 minutes, stirring occasionally. Makes enough sauce for 2 large pizzas. If preferred, make one pizza and freeze remaining sauce.

I haven't even made the pizza pie yet :) This sauce is so delicious and has such a depth of flavor even before simmering. I am going to simmer longer than 45 minutes. The anticipation of the pie is almost too much to bear!
