SPICY APPLESAUCE CUPCAKES 
1/3 c. shortening
1 tsp. vanilla
2/3 c. sugar
2 eggs
1 1/3 c. flour, sifted
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. cloves
3/4 c. sweetened canned applesauce
3/4 c. raisins (optional)

Cream shortening and vanilla. Add sugar gradually and cream until light. Add eggs, one at a time, beating well after each addition. Sift flour, baking powder, soda, salt and spices. Add flour mixture alternately with applesauce, mixing until well blended. Fill paper fillers in muffin pans 2/3 full. Bake at 375 degrees for 20 minutes. Frost with butterscotch frosting.

BUTTERSCOTCH FROSTING:

1 c. brown sugar
5 tbsp. butter
1/2 c. milk
1 tsp. vanilla
1 to 1 1/2 c. confectioners sugar, sifted

Combine brown sugar and butter, bring to a boil, stirring constantly. Add milk and cook 3 minutes. Cool to luke warm. Add vanilla and confectioners sugar. Beat until right consistency for spreading. Great for kids.
