STUFFED PITA 
1 tsp. butter
1/2 c. sliced zucchini
2 tbsp. chopped onion
2 oz. boiled ham or skinned & boned roast turkey, cubed
1 egg, beaten
1 oz. Cheddar or Swiss cheese, shredded
1 pita bread (1 oz.)
2 tomato slices

In 8 inch nonstick skillet heat butter over medium heat until bubbly and hot; add zucchini and onion and saute, stirring constantly, until zucchini is tender, 2-3 minutes. Add ham (or turkey) and cook, stirring constantly, until heated through, about 1 minute. Add egg and cook, stirring frequently, just until egg is set, 1-2 minutes. Stir in cheese and cook until cheese melts.

Cut pita in half crosswise, forming 2 pockets; stuff each pocket with half of the egg mixture and 1 tomato slice. Makes 1 serving.
