ZUCCHINI AND TOMATO SAUTE 
1 med. onion, chopped
2 tbsp. olive oil
1 clove garlic, crushed
3 med. tomatoes, chopped and peeled
1/2 tsp. basil
1/2 tsp. oregano leaves
1/4 c. dry white wine
1 1/2 lbs. zucchini, unpeeled and sliced
1/2 c. Loccatelli cheese or Parmesan

Cook onion in oil in large frying pan until soft. Mix in garlic, tomatoes, basil, oregano and wine. Bring to a boil, cover. Reduce heat and simmer 20 minutes. Uncover. Mix in zucchini. Cook until tomato sauce is reduced and zucchini is tender. Sprinkle with cheese. Serves 4.
