ZUCCHINI CASSEROLE 
2 or 3 sm. zucchini
2 cans cream of chicken soup, undiluted
1 c. Minute Rice, uncooked
1 stick butter, melted
1 med. onion, chopped
1/4 c. milk
1/4 c. water
1/2 c. Velveeta cheese, cubed

Saute onion in butter. Add milk, water and soup. Add rice and cheese. Add zucchini, mix and bake in ungreased pan for 1 hour at 350 degrees.
