WILD RICE CASSEROLE 
1/3 c. wild rice
1/3 c. brown rice
1/2 tsp. salt
1 carrot, cut into matchsticks
1 onion, chopped
1 rib celery, chopped
1 sm. zucchini, cut into matchsticks
1/2 c. broccoli florets
10-12 mushrooms, sliced
1 c. grated mild cheese
1/4 c. sliced almonds (optional)

Rinse the rices and cook them together with salt in 2 cups water. Steam vegetables briefly 2-5 minutes. Toss rice and vegetables - turn into shallow baking dish. Top with cheese and nuts and cook under broiler until cheese melts. Serves 4-6.
