ZUCCHINI CASSEROLE | |
2 med./large fresh zucchini, sliced and blanched 3 to 4 c. rice, cooked 1 qt. tomato sauce (homemade or Prego, etc.) 1 lb. ground beef, cooked 1 chopped onion 1 to 2 lb. cottage cheese, sm. curd (or Ricotta) 8 oz. Mozzarella, shredded Seasonings: garlic powder, basil, oregano, salt and pepper Layer prepared ingredients in large baking pan (9 x 13 x 2) beginning with sauce on bottom, zucchini in middle and end with sauce on top. Sprinkle with seasonings between layers. Top with Mozzarella cheese and bake in 350 degree oven until heated through and browned - about 45 minutes. Let set before cutting into squares and serve with grated cheese. |
