ZUCCHINI CASSEROLE | |
1 1/2 lb. zucchini (cut in 1/4" rounds), approx. 6 c. 1 lb. ground beef 1 med. onion, chopped 1 c. instant rice 1 tsp. chopped garlic 1 tsp. oregano 1 pt. sm. curd cottage cheese 1 can cream of mushroom soup 1 c. grated Cheddar cheese Cook zucchini in boiling salted water until barely tender. Drain well. Saute beef with onion until slightly browned. Add rice and seasoning to beef. |
