ROQUEFORT VINAIGRETTE 
1 lg. clove garlic, mashed
1/3 c. olive oil
2 oz. Roquefort cheese
3 tbsp. red wine vinegar
2 tbsp. sour cream
Freshly ground black pepper
3 tbsp. minced fresh chives

Combine garlic, oil, cheese, vinegar and sour cream in blender. Season with pepper. Use a rubber spatula to stir in chives. Spoon over cauliflower, rice, etc.
