ROQUEFORT WHIPPED WITH BRIE 
7 oz. brie rind, removed
2 oz. Roquefort
3 tbsp. unsalted butter
1/4 c. whipping cream
Fresh ground white pepper

Combine cheese and butter in food processor and mix using steel knife with 6 on/off turns. Add cream and pepper and blend until completely smooth. Cover and let stand at room temperature 1 hour before serving.
