SHIRLEY'S EASY SOUTHERN PEACH COBBLER | |
Fresh peaches are recommended. May double recipe, if so, bake in 13x9-inch dish. Glass baking dishes work best. 1/2 cup (1 stick) butter 1 cup self-rising flour 1 1/4 cups sugar, divided 1 cup milk 2 to 3 lb. peaches, peeled and sliced OR 1 (29 oz.) can sliced peaches, drained Preheat oven to 375°F. Peel and slice peaches; set aside. Put butter in 8-inch square baking dish, place in oven until melted. Mix self-rising flour, 1 cup sugar and milk together to form a batter, stirring until smooth. Pour batter into dish with melted butter; add peaches over top of batter. DO NOT STIR! Sprinkle top with remaining 1/4 cup sugar. Bake at 375°F for about 50 minutes or until batter rises to top and is lightly browned. Serve warm with ice cream or cold with whipped cream. Submitted by: Shirley Lee |
