Preheat oven to 350°F.

In a large bowl:

1 1/2 c. flour
1 1/2 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 teaspoon freshly grated orange peel or ginger root (optional or both)

Tip: Use a fine grater or microplane and grate only the orange portion of the peel (zest), discarding the bitter white pith.

In a medium bowl:

2 medium eggs
1/2 c. melted butter
1/2 c. honey
1 tsp. vanilla

2 c. grated carrots
