COMPANY CAULIFLOWER 
1 med. head cauliflower
1/2 (8 oz.) can sliced mushrooms
1/4 c. diced green pepper
1/3 c. butter
1/4 c. flour
2 c. milk
1 tsp. salt
6 slices Pimento or Velveeta cheese
Paprika

Separate and cook cauliflower in salted water, about 10 to 15 minutes. Drain. Meanwhile brown mushrooms and green pepper lightly in butter. Blend in flour, gradually stir in milk and cook, stirring constantly until thick, add salt. Place half cauliflower in a 1 1/2 qt. casserole. Cover with half the cheese, then half the sauce. Repeat layers. Sprinkle with paprika. Brown in moderate oven to 350 degrees about 15 minutes. Makes 6 to 8 servings.
