POTATO LATKES 
4 lg. potatoes, grated
2 lg. eggs, do not beat
1 lg. onion, grated
Flour
Crisco shortening

Grate potatoes fine. Grate onion fine. Add eggs; add enough flour to mixture so it doesn't fall apart. Add salt and pepper to taste.

Drop in heavily greased fry pan with large spoon into hot grease. Fry on both sides until golden brown. Serve with either or both sour cream and applesauce. Yield: enough for 4-5 servings depending upon how many you have left; people tend to eat these right out of the pot.
