RHUBARB CRUNCH 
CRUMB TOPPING:

2 c. flour
1 1/2 c. rolled oats (quick)
2 c. brown sugar, packed
1 c. butter, melted
1 tsp. cinnamon

SAUCE:

1 1/2 c. sugar
3 tbsp. cornstarch
1 1/2 c. water
2 tbsp. vanilla

Mix together Crumb Topping ingredients until crumbly. Press half of crumbs into greased 9"x13" dish. Cover with the diced rhubarb.

Combine Sauce ingredients in saucepan; cook sauce, stirring until thick and clear. Pour over rhubarb. Top with remaining crumbs. Bake at 350 degrees for 1 hour. Serve warm or cold, with or without whipped cream or ice cream. Good any way!
