FRESH PEAR CAKE 
3 eggs
2 cups sugar
1 tsp. vanilla
1 cup oil
3 cups enriched flour
1/2 tsp. salt
1/2 tsp. baking soda
2 tsp. cinnamon
1 cup pecans, chopped
3 cups pears. coarsely chopped or diced

Preheat oven to 350°F.

Beat eggs. Add sugar, vanilla and oil; beat real good. Add flour, salt, baking soda and cinnamon; mix. Add pecans and pears.

Bake at 350°F for 1 hour or longer.

I wasn't hopeful in trying this recipe, but I was pleasantly surprised, it was so simple. I used a 9x13 pan, and one hour bake time was perfect. There was a nice crust on top. I didn't have pecans, so I used walnuts.
