FRESH "APPLE" OR "PEAR" CAKE 
1 1/2 c. Wesson oil
2 c. sugar
2 eggs, beaten
1 tsp. baking soda
1 tsp. cinnamon
3 c. cake flour, sifted
3 c. apples or hard pears, grated
2 tsp. vanilla
1 c. nuts, chopped
1 tsp. salt

Cream sugar and oil; add beaten eggs. Add dry ingredients and vanilla, then apples or pears and nuts. Bake at 350 degrees in preheated oven for 1 hour in 13"x9"x2" Pyrex dish or 2 (8") round cake pans (reduce baking time).

ICING:

1 (8 oz.) pkg. cream cheese
1/2 stick butter, melted
1 box powdered sugar
1 tsp. vanilla
1/2 c. coconut
1/2 c. chopped nuts

Best made 2 days before serving (can refrigerate).
