RED VELVET CAKE WITH FRENCH
ICING
 
1 c. shortening
1 1/2 c. sugar
2 eggs
1 c. buttermilk
3 tbsp. cocoa
2 oz. red food coloring
2 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1 tsp. vinegar

Cream shortening and sugar until smooth. Add eggs and beat well. Stir in cocoa and coloring. Sift flour, salt and soda 5 times; add alternately with milk, beginning and ending with flour. Add vinegar and vanilla last. Pour into 3 greased and floured cake pans. Bake at 350 degrees for 20 minutes.
