SHRIMP - RICE SALAD 
1 1/2 c. water
1 c. regular rice
1 c. Italian salad dressing
1 c. frozen peas, not defrosted
4 oz. mushrooms
5-6 scallions, chopped
1 c. water chestnuts, chopped and drained
1/2 c. sliced green olives
1/2 c. sliced black olives
1 c. artichoke hearts, chopped and drained
1/2 c. mayonnaise
1 lb. shrimp, cooked and cleaned

Cook rice according to directions on package in Italian salad dressing and water.

Note: All of the liquid will not be absorbed now, other ingredients will absorb it!

Fold in remaining ingredients, except shrimp. Refrigerate. Fold in shrimp before serving on lettuce leaves.

Note: Ingredients, except for shrimp, can be prepared a day in advance.
