SHRIMP AND RICE SALAD | |
1 1/2 c. water 1 tsp. salt 1 1/2 c. Minute Rice 1/2 c. celery, chopped 1/4 c. green peppers, chopped 1/4 c. onion, chopped 1/2 c. French Good Seasons salad dressing 1 c. shrimp, cut up or use imitation seafood sticks 1/2 c. mayonnaise or Miracle Whip Bring water and salt to boil. Stir in rice. Cover and remove from heat. Let stand 5 minutes. Add shrimp, celery, green pepper, onion and French dressing. Mix well. Cover and chill at least one hour. Add mayonnaise (can be made the night before and add mayonnaise next day). Also regular bottled French dressing may be used but usually needs more. Pretty for a luncheon and served with crackers and lemonade. |
