TENNESSEE FRUIT CAKE COOKIES | |
1 lb. chopped dates 1 lb. glazed pineapple 1 lb. glazed cherries 1 1/2 lb. white raisins 1 lb. chopped nuts 1 c. brown sugar 2 oz. wine 4 eggs 4 c. flour 1/2 c. shortening (calls for butter) 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. salt 3 tsp. baking soda in 3 tbsp. milk Mix chopped fruit with 1 cup flour. Cream shortening and sugar. Add eggs. Beat well after each egg. Add dry ingredients alternately with wine and milk. Fold in fruit. You might need a large roaster to mix this in. Bake in moderate oven. Drop by teaspoonfuls. |
