COCONUT CARROTS 
2 c. carrots, thinly sliced
1 tbsp. butter
1/3 c. toasted coconut
Salt & pepper

Steam carrots until just tender. Toss with butter, toasted coconut. Salt and pepper to taste. To toast coconut, pour flake coconut into heavy, ungreased skillet over medium heat and toast, shaking pan constantly until nicely browned. Serves 4.
