CARROT COCONUT BREAD 
3 eggs
1/2 c. oil
2 c. coconut
1 c. walnuts
2 c. carrots, finely shredded
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
2 c. flour

Use large bowl, beat eggs until light, then stir in oil and vanilla. Add rest of ingredients and stir until well blended. Bake in loaf pan, buttered and dusted with flour, at 350 degrees for 1 hour.
