STIR - FRIED PORK WITH
VEGETABLES
 
This is a quickly prepared meal-in-one dish that is an excellent choice for family meals. When red bell peppers are not available, substitute another green pepper in its place. Preparation time: about 15 minutes. Cooking time: 15 to 20 minutes.

FOR 4 SERVINGS YOU WILL NEED:

1 lb. lean loin or shoulder pork, cubed
1 pkg. (10 oz.) cut green beans, frozen
2 lg. onions, sliced
1 green pepper, sliced
1 red bell pepper, sliced
2 tbsp. butter
1 tsp. salt
1/2 tsp. paprika
1/2 tsp. black pepper
1 1/2 c. beef or chicken broth
4 tbsp. catsup
2 tbsp. cornstarch

1. Cut meat into 1/2 to 3/4 inch cubes, removing any fatty parts. Set aside.

2. Partially thaw the green beans.

3. Add onions and peppers to butter in heavy, large skillet. Saute for 1 minute. Add meat and green beans and stir-fry over high heat until all pieces are heated through. Add salt, paprika and black pepper. Mix well.

4. Pour in the beef or chicken broth. Cover and simmer for 15 minutes or until vegetables are tender-crisp.

5. Mix catsup with cornstarch. Stir into mixture in pan. Cook, stirring, until juices are thickened. Good served with: Hot cooked rice, tossed green salad, hot rolls.

TIPS: You can substitute 1 pound fresh green beans, cut into 1 1/2 inch pieces, for the frozen beans.

FOR 2 SERVINGS: Half of the ingredients. FOR 8 SERVINGS: Double the ingredients but use only 2 1/2 cups broth.
