STIR-FRIED GINGERED PORK AND
VEGETABLES
 
3 tbsp. vegetable oil
6 oz. boneless pork, thinly sliced
1 tbsp. sugar
5 tsp. soy sauce, divided
1 tsp. fresh grated ginger
1 carrot, grated
1 sm. yellow squash, sliced
1 c. broccoli florets
1 sm. onion, sliced

Heat 1 tablespoon oil in 9 inch skillet and saute pork over high heat until it begins to brown. Sprinkle sugar and 3 teaspoons soy sauce over meat, cooking and stirring for 1 minute; add ginger and cook 2 more minutes. Place meat on plate and keep warm. In same skillet, heat 2 tablespoons oil until hot. Add vegetables and stir fry 3 minutes.
