“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES 
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

I woke up this morning wanting pancakes for breakfast, but to my surprise there were no eggs. I googled egg free pancakes and came up with quite a few options. This one looked the best so I gave it a go. They turned out better than I expected and my partner (who is usually pretty picky) said he liked these better than the ones I usually make. Looks like I'll have to swap it in my recipe book :) I didn't have any cinnamon, but I will put it on the next shopping list to give it a try. Thanks so much dawn )

Omg! I'm always craving pancakes but either never have the batter or never have the eggs. I just tried this recipe. I didn't use the cinnamon and vanilla extract, however, I used banana extract instead, and it was simply delicious. I must have messed up somewhere along the lines, because it want fluffy, but at 3am, I could care less lol. Thank you so much for this addition to my life! :)

I still prefer it with eggs, but I added some frozen (melted) strawberries and they were great. Kinda hard to flip I found even though the batter was thick which is why I prefer with eggs still but fantastic when you are without.

What a great recipe! My whole family loved them. I have recently decided to eat a vegan diet as much as possible and this recipe made it easy for me to ditch the eggs and just substitute almond milk for the cow milk. They were perfectly sweetened, fluffy and moist. The perfect pancake combo!I added bananas and then we topped them with nut butter and pure maple syrup and they were so delicious! I love that there is only 1t of sugar so this made for a small amount of sugar but yet still a deliciously sweet treat for the kids. What a great way to start their day!

I gave this recipe a 3 only because of the flavor. My family and I felt that the pancakes had no flavor. I added 1% milk instead of the whole milk and chocolate chips. I don't know if the milk affected the flavor at all but my stomach can't handle whole milk. I had to add a lot of syrup for them to have some taste. I feel this is a good recipe and with some tweaking I can give it the flavor my family and I love. I also love the idea of eggless pancakes. With some tweaking, this could be a winner in our home.

Great recipe. I followed the recipe and it yields about 6 medium sized pancakes. We doubled up on the recipe for 3 people, 12 pancakes. Yummy!!
