EGGPLANT CASSEROLE | |
2 med. size peeled and diced eggplant 2 med. onions, chopped 2 lbs. choice ground meat 4 c. cooked rice (do not use instant rice) Use the following to suit family taste: Black pepper Salt Garlic Dried or fresh parsley Celery (We use generous amounts of all of the seasonings.) 1 stick butter Brown meat, add onions, eggplant and seasoning. (Use Dutch oven pot.) Simmer 10 to 15 minutes. Add cooked rice. Mix and spread evenly in your baking dish. Coat with bread crumbs and pats of butter. Bake at 350 degrees for 40 minutes or until golden brown. |
