SEAFOOD CASSEROLE 
2 eggplants
1/4 c. butter
1 sm. onion
2/3 c. chopped celery heart
2 c. cooked rice
2 stems green onion, chopped
2 tbsp. parsley, chopped
1/2 can mushroom soup
1 lb. peeled shrimp & crab meat
Salt to taste
Pepper to taste
Garlic to taste
Red pepper to taste

Saute onions and celery until wilted. Add green onions and parsley. Add shrimp and saute until pink. Add crab meat and mix well, then add cream of mushroom soup. Mix seafood mixture into eggplant. Add salt, etc., to taste. Add half a jar of Cheese Whiz to this, and put bread crumbs on top. Brown in oven.
