TOMATOES FLORENTINE 
6 tomatoes
2 tsp. butter
1 chopped sm. onion
1 clove garlic
1 (12 oz.) pkg. frozen chopped spinach, thawed & drained
1/3 c. milk
Salt & pepper

TOPPING:

2 tbsp. fine dry bread crumbs
2 tbsp. chopped parsley
2 tsp. grated Parmesan cheese

Cut a slice from top of each tomato. Scoop out pulp to halfway down the tomato.

In a skillet, melt butter. Stir in onion and garlic and cook over medium heat until tender. Stir in spinach, milk and salt and pepper to taste. Spoon mixture into tomatoes and arrange in oven proof dish or baking sheet.

TOPPING: Combine bread crumbs, parsley and cheese; sprinkle over top of tomatoes. Bake in 400 degree oven for 20 minutes. Makes 6 servings, Calories per serving: 70.
