TWICE BAKED POTATOES 
4 lg. potatoes
8 strips bacon
1/3 c. green onion, chopped
3 tbsp. Parmesan cheese
1 c. sour cream
1/2 tsp. salt
butter
Paprika

Bake potatoes 1 hour at 400 degrees and cool. Fry bacon and crumble. Saute onion in bacon grease, then drain. Cut potatoes in half lengthwise and carefully scrape out insides. Mix insides with bacon, onion, Parmesan cheese and sour cream until smooth. Also add 1/2 teaspoon salt. Fill each potato skin with mixture. Return to oven and bake at 350 degrees 15-20 minutes. Sprinkle with paprika or grated Cheddar cheese or butter.
