TWICE - BAKED POTATOES 
4 med. potatoes
1 c. low fat cottage cheese
1/2 c. skim milk
1 tbsp. minced onion
Paprika
Chopped parsley

Preheat oven to 400 degrees. Scrub potatoes. Bake until done; 30 to 60 minutes. Cut potatoes in half lengthwise. Scoop out potatoes, leaving skins intact for stuffing. Mash potatoes until fluffy with cottage cheese, milk and onion. Pile mixture back into skins. Sprinkle with parsley and paprika. Bake 10 minutes more or until just golden.
