TWICE BAKED POTATOES | |
4 lg. potatoes 2 tbsp. butter 1/2-3/4 c. sour cream 1 egg 1 tbsp. chopped green onion Salt & pepper 1/2 c. grated sharp American cheese Parmesan cheese or paprika Bake potatoes at 400 degrees about 1 hour. Cut in half lengthwise and scoop out center. Mash potatoes while hot. Add butter, sour cream and egg. Beat until fluffy. Stir in cheese and onions. Season with salt and pepper. Fill potato shells. (May be frozen at this point.) Bake 30 minutes at 350 degrees until puffed. If frozen bake 30 minutes longer. Sprinkle tops with cheese, bacon or other desired toppings. |
