SUGARED ALMOND STICKS 
1/2 c. blanched almonds
2 tbsp. sugar
1 c. sifted flour
1/3 c. sugar
1/4 tsp. salt
1/2 c. butter
1 egg yolk
1/4 tsp. almond extract
1 slightly beaten egg white

Grind almonds in blender. Mix 2 tablespoons of almonds with 2 tablespoon sugar. Set aside.

Combine remaining almonds, flour, sugar and salt. Cut in butter until mixture resembles coarse crumbs. Add egg yolk and almond extract. Mix well. Divide dough into 6 portions on lightly floured surface.

With floured hands, roll each portion into a rope 12 inches long. Brush tops generously with egg white. Sprinkle with reserved almonds. Cut into 2-inch strips. bake at 350 degrees for 15 minutes. Cool 5 minutes before removing from cookie sheet.
