GOLDEN PARMESAN POTATOES 
6 lg. potatoes (3 lbs.)
1/4 c. sifted flour
1/4 c. grated Parmesan cheese
3/4 tsp. salt
1/8 tsp. pepper
Chopped parsley
2/3 c. butter

Pare potatoes, cut into quarters. Combine flour, cheese, salt, and pepper in a paper bag. Moisten potato slices with water. Shake a few at a time in the bag to coat potatoes well with mixture. Melt butter in a 13x9 inch pan. Place potatoes in single layer in pan. Bake at 375 degree oven for 1 hour, turning once during baking. When golden brown, remove from oven. Sprinkle with parsley and serve.
