2 unbaked 9-inch pastry crusts 1-1/2 c. shredded Swiss cheese 1 c. shredded Cheddar cheese 6 eggs, lightly beaten 2-1/2 c. half and half 1 clove garlic, pressed or garlic salt 4 green onions, thinly chopped (including tops) 1 tsp. salt 1/4 tsp. pepper 1 tbsp. butter Place one half of the shredded cheeses on the two unbaked pastry crusts. Spread the chopped onions on top of cheeses. In bowl, beat together eggs, half and half, salt, pepper and garlic, until very fluffy. Pour over the cheese. Break butter into small pieces over top and sprinkle other half of the shredded cheeses on top. Bake in preheated 425°F oven 15 minutes. Reduce heat to 300°F and bake for 30 minutes or until knife inserted near center comes out clean. Allow to stand 10 minutes before serving. Makes 6 servings per quiche. Variations: You may want to add any of the following: Lightly precooked broccoli, 8 strips of cooked and crumbled bacon, small cooked shrimp, scallops or sliced fresh or canned mushrooms. If using larger shrimp, cut in thirds or halves. Place any or several of the above on top of the chopped onion and then add egg and half and half mixture. |
