BUCKWHEAT PASTA WITH VEGETABLES 
1 lb. buckwheat noodles (or use thin spaghetti)
3 tbsp. sesame oil
1/2 tsp. salt
1/2 tsp. pepper

DRESSING:

Mix together: 1 tbsp. minced garlic 1 tbsp. ginger 1/4 c. sesame oil 2 tbsp. sugar 2 tsp. pepper

Cook pasta according to directions. Drain and rinse. Toss with 3 tablespoons sesame oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Mix dressing. Julienne cut 3/4 cup each snow peas (or sugar snap peas), red pepper, zucchini and or yellow squash, and carrots. Slice 1 cup mushrooms. Just before serving, toss pasta with vegetables and dressing.

Note: Any type of vegetables will do.
