BUCKWHEAT FLAPJACKS | |
1 c. buckwheat flour 1 c. white flour 1 tsp. baking powder 1 1/2 tsp. baking soda 1/2 tsp. salt 3 c. buttermilk 1/4 c. vegetable oil Combine dry ingredients and add buttermilk and oil. Stir only until dry ingredients are moistened. The batter should be thin. Add more buttermilk if needed. Grease and heat a large griddle. Pour 1/4 cup batter on heated griddle for each flatjack. Cook on one side until bubbles form on top. Flip and cook on the other side until browned. Stir down batter before using each time. Serve with honey, syrup or fruit sauce. Yields 2 dozen. |
