SUGARLESS CHOCOLATE CHIP - HONEY
COOKIES
 
1 1/4 c. sifted flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 lb. sweet butter
1/2 tsp. vanilla
1/2 c. honey
1 lg. egg
4 oz. pecans or walnut pieces
6 oz. semi-sweet chocolate chips

Adjust racks in oven to divide oven into equal thirds. Line cookie sheets with foil. Sift together flour, soda and salt. Set aside.

In separate bowl, cream butter. Add vanilla and honey; beat to mix. Add egg and beat to mix. The mixture will look curdled on low speed, add sifted dry ingredients to creamed mixture, scraping sides of bowl with rubber spatula; beat only until mixed. Stir in nuts and chocolate chips. Drop onto cookie sheets. Cooking times vary according to your oven.
