VANILLA WAFERS 
1/2 c. butter, at room temperature
1/4 c. sugar
1 lg. egg
1 1/2 tsp. vanilla extract
3/4 c. all-purpose flour

Preheat oven to 350 degrees. Beat the butter and sugar with electric mixer in mixing bowl until light and fluffy. Add the eggs and vanilla extract and mix until blended. The dough won't be smooth until the flour is added. With the mixer on low speed, add the flour a spoonful at a time. Keep mixing until the dough is smooth.

Using teaspoon measure, scoop out a spoonful of dough and put it on a cookie sheet. Space the cookies about 1 inch apart. Bake until the cookies are golden brown around the edges, 10 to 12 minutes. Cool cookies completely before removing from cookie sheets.
